Chocolate Pudding


ChocPuddingOne of my all time favorite cool-weather comfort foods is warm chocolate pudding from scratch.  Mother used to make this when we were children so it brings back those wonderful memories of childhood.  Certainly it would be possible to throw together some Jello, but this recipe will have your family begging for more.  I got this recipe from The Fannie Farmer Cookbook and it is supposed to be the one that Jo of Little Women carried to Laurie to restore his health.   It is also a wonderful way to use up extra milk.

Ingredients

  1. Mix cornstarch, sugar, and salt with 1/4 C milk
  2. Heat the remaining milk in a heavy-bottomed pan or double-boiler
  3. Slowly add the cornstarch mixture, stirring constantly
  4. Cook over medium heat until thickened, stirring constantly
  5. Allow to cool, then add vanilla
  6. Cover and chill

Alterations

To make chocolate pudding – while heating milk, add 2 ounces of unsweetened chocolate, and stir until smooth.

Add 1/4 cup of red hots while heating milk (to either vanilla or chocolate version).  Adds  wonderful spice – will also add the red color!  Spicy warm red-hot pudding for valentine’s day?

Add 2T of butterscotch (or flavor of your choice) schnapps along with the vanilla.  Nice adult kick to your pudding on a cold winter evening.
