Taco Soup

Used ground chicken rather than beef.  I served with crushed tortilla chips and shredded cheese on top.   Chop a medium size onion, saute in frying pan with a pound of ground beef; once brown, add to a dutch oven.

Pour in the following (from cans, juice and everything):

  • one can hominy (I used white hominy)
  • one can yellow corn
  • one can pinto beans
  • one can kidney beans
  • one can stewed tomato
  • one can rotel tomato
  • one mini can diced chilis
  • one package of hidden valley ranch dressing (dry powder)
  • one package of taco seasoning (dry powder)

Add an inch or so of additional water, stir well, and heat through for at least 45 minutes

FYI, couldn’t find my big dutch oven so after browning in the small dutch oven, I combined everything in the crockpot and let it sit on high for 3 hours before serving.  Instead of a package of hidden valley ranch – I used bottled ranch and didn’t add much water.

Makes 20 – 1 cup servings, all these ingredients are power foods and it is only 2 points per serving in Weight Watchers.
