Sesame Chicken Stir Fry


Okay, my new “crock pot” dish for potlucks!

Sauce

  • 1 bottle low sodium soy sauce
  • 1 c brown sugar
  • 1 T minced garlic

Heat this up over the stove or in the microwave until brown sugar is dissolved.  Should have a slightly sweet flavor.  I don’t actually measure any ingredients so I’m guessing, you can always start with a little less and bump up to get the flavor.

  • 1lb boneless skinless chicken breast
  • 4 bags of boil in bag rice – small bags, used Wally World’s generic version

Cut chicken into small pieces and brown up in a skillet with EVO.  After chicken is brown, dump a cup of sauce in and let it simmer up around the chicken for a little bit to finish off cooking the chicken.  I put the hot sauce in a large tupperware, then dump the chicken in and let it sit for at least a few hours.  I also put the rice in with this after it is cooked.  This gets all that sauce throughout the dish.

  • 4 bags of frozen stir fry veggies – small bags

I dump the chicken, rice, sauce, and all the bags of veggies in the crock pot.  Let it sit in the fridge overnight (this lets the veggies thaw and gets that sauce on everything).  In the morning you are turning on the crock pot to heat everything up so if you are eating after work, turn the crock pot on low for 8 hours, if you need it for a lunch high for 4 hours.
